Eggplant salad: mouth watering recipe (vegan)
Hello my dear friends! Today we will talk a bit about my favourite vegetable : eggplant. :) Really I could eat it everyday, I simply adore it. Recently also I found out that it is also very high in nicotine ?! maybe this is why I am addicted to it, I quite smoking.. lol
Anyway, back to focus: here you have the authentic Greek recipe of eggplant salad. You can simply eat it by its own, or you can add it to some wraps - I highly recommend that. It is a very famous dish in Greece and we eat it as a starter with some roasted bread, with olive oil, oregano and garlic.
What will you need:
- 6 eggplants (for better taste you will need both types of eggplants, the black (2) and the purple (4) one)
- 3 red bell peppers
- salt & pepper
- olive oil
- fresh cut parsley
You start by putting all peppers and eggplants in the oven to roast them a bit. Maybe you need to turn them around at some point to make sure they are evenly cooked. You put them at 180 oC at a pre heated oven, at least 40 min, but keep an eye on them and take them out when it feels ready. Meaning when their skin, seems ready to fall off and it will be easy for you to pill them off.
When you have pilled off the skin you cut them into small pieces, the size of the pieces is up to you and your taste. Just make sure you have them evenly cut. You dice the garlic into very small pieces and the parsley. You assemble all the ingredients together and you are good! Your yummy eggplant salad is ready!
TIP: When you have everything cut and assembled, you can put it in a blender or food processor for a smoother texture. This is how we prefer it onboard!
