Stuffed dumplings

The tradition of stuffing leaves dates back to ancient Greece, where fig leaves were filled with sweetened cheese, a dish known as "thria." The modern iteration of dolmadakia has been influenced by various cultures, notably during the Ottoman period, reflecting a blend of culinary traditions. The name "dolma" itself is derived from the Turkish word "dolmak," meaning "to fill."

A similar culinary creation to risotto known as "kritharoto." This dish features orzo pasta—called "kritharaki" in Greek—prepared in a manner akin to risotto. Kritharoto often incorporates seafood, combining orzo with ingredients like shrimp, mussels, and squid, all simmered together to create a creamy, flavorful dish.

Traditional Greek Moussaka

The modern version of moussaka, particularly the inclusion of the béchamel topping, is attributed to the Greek chef Nikolaos Tselementes in the 1920s. Before this innovation, the dish consisted mainly of layers of fried aubergine topped with meat and tomato sauce, sometimes finished with cheese. ​

Bourdeto is a traditional fish dish from Corfu, Greece, renowned for its spicy and flavorful profile. The name "bourdeto" is derived from the Venetian word "brodeto," meaning broth, reflecting the island's historical Venetian influence.

Meet Yannis – The Heart & Soul of Aiolis Experience
Every great experience starts with a story—and ours begins with Yannis, our beloved chef and the soul behind Aiolis.

Back in 2015, while hosting Airbnb guests onboard in Mykonos, Yannis began preparing simple homemade breakfasts. The response was overwhelming—guests raved about the food and kept asking for more: breakfast, lunch, and dinner, as often as possible. Word spread, and soon, food became the highlight of the sailing experience. That spark of joy and connection gave birth to what is now our signature Sailing & Gastronomy cruises in Athens.

Originally from Pontus, Yannis carries with him a rich culinary heritage passed down through generations. His roots run deep, and his passion for food is infused into every dish he prepares. With heartfelt hospitality, he welcomes guests from all over the world and continues to receive rave reviews for his lovingly crafted meals.

Cooking for Yannis is more than a job—it’s a calling. Every meal served on board feels like it was made by your own Greek grandmother, full of love, care, and authenticity.
